There has been lots of dehydrating in my kitchen lately! Since I received my Excalibur Dehydrator I’ve been working at clearing out the freezer. I’m happy to say that all the veggies I had frozen have now been dehydrated! This is a huge space and energy savings. It also frees up my freezer space for meat and things waiting to be canned.
These are peppers and mixed vegetables before and after dehydrating.

Once dehydrated, what can you do with them?
Do you notice a difference in the flavor? I LOVE bell peppers but post freezing, they’re just mush and don’t have as much flavor. Have you tried dehydrating the peppers sans freezing?
I never know why the dehydration is for… care to share?

You can store them until needed. When your ready to use soak them in water. Once rehydrated cook as you would frozen or canned veggies.

They aren’t as good as fresh, but I think they are the same or better then frozen. These peppers I had frozen from a sale last summer. I’ll try doing some fresh ones and let you know if there is a difference.

Dehydrating removes 95% or more of the water in food. They keep longer then canning or freezing this way. To use, just soak in water until rehydrated.

When you are dehydrating say red peppers how long to they take to be finished. If you had a choice to dehyrdrate or can items which would be your preferance. Clare
