- 4 cups blueberries
- 2 cups white sugar
- 3 tablespoons lemon juice
Put the blueberries and lemon juice in a large pot and gently bring to a simmer over low heat.
When the blueberries have released their juices, mash them with a potato masher for a smoother jam (optional), then add the sugar and turn the heat up to medium-high.
Cook until your jam reaches the gel stage, about 20 minutes.
Pour the jam into your prepared jars, leaving 1/4 inch headspace. Let the jars cool and then store in the fridge. Or, for long-term storage, process in a water bath canner to make it shelf-stable.
Canning Instructions
To preserve your blueberry jam, ladle the jam into your prepared canning jars, leaving 1/4 inch of headspace. Wipe the rims clean, and place the lids on finger-tight.
Process in a water bath canner for 10 minutes. Then turn off the heat and let the jars cool in the canner for 5 minutes, this helps to prevent siphoning. Then remove them and place the jars on a towel.
After 24 hours, check the jars to make sure they have sealed. Any jars that didn't seal, place into the fridge to use up first.
- This recipe can be doubled, but don't cook more than 8 cups of blueberries at a time, or it won't set properly.
- If you are over 6,000 feet in elevation, process for 15 minutes in a water bath canner.
