Ingredients

Bean Mixture

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup sour cream
  • 1/2 cup diced onion
  • 1 teaspoon salt
  • 3 cloves garlic minced
  • 1 teaspoon white sugar
  • 1 cup cheddar cheese shredded
  • 12 cups frozen green beans

Topping

  • 1 cup cheddar cheese shredded
  • 1 cup crumbled Ritz crackers
  • 2 tablespoon butter melted

Instructions

  • Preheat oven to 350F.
  • Boil or steam the green beans for 5 minutes.
  • Melt the butter in a large skillet over medium heat. Add onions and fry until tender. Then stir in flour until smooth, and cook for 1 minute.
  • Stir in the sour cream, cheddar cheese, salt, garlic, and sugar. Add the drained green beans and stir to coat. Pour into a 9x13 casserole dish.
  • Sprinkle the shredded cheese evenly over the top of the green beans.
  • Mix the cracker crumbs with the melted butter in a small bowl and sprinkle over top of the casserole.
  • Bake for 30 minutes until the topping is golden and the cheese is bubbly.

Notes

If using fresh beans, wash the beans, cut them into 2-inch sections, and boil them for 5 to 8 minutes until done but still a little crisp.
Make A Head Instructions
  • Follow all the steps in the recipe, but stop before adding the cracker topping. Prepare the buttery cracker topping and place it in an airtight container.
  • Cover the casserole with foil or plastic wrap and place it and the topping in the fridge up to 24 hours ahead of time.
  • When you are ready to bake the casserole, get your oven preheating to 350F. Let the casserole sit at room temperature for 20 to 30 minutes while your oven heats up. Then add the topping and bake. Add an extra 5 to 10 minutes to the baking time for the dish to heat all the way through.
Storage And Reheating Tips
  • Cover the baking dish with plastic wrap or foil or transfer to an airtight container and store in your fridge for up to 4 days.
  • To reheat small portions, microwave them for 30-second intervals, stirring between heatings. For larger portions, cover the baking dish with foil and reheat it at 350F for 20 minutes or until heated through.
