- 4 cups pears peeled, cored, and chopped (equals about 10 ripe pears)
- 1-2 teaspoons water
- 2 teaspoons lemon juice
- 1 teaspoon ground cinnamon
- 1/2 cup brown sugar optional
Combine the pears, water, cinnamon, and lemon juice in a saucepan and bring to a boil. Reduce the heat and simmer for 25 minutes or until the pears are soft and start to break down.
Puree with an immersion blender or transfer to a blender and puree.

Ladle your hot pear sauce into your prepared jars, leaving 1/2 inch of headspace.

Process pints for 20 minutes, quarts for 25 minutes, adjusting to your altitude.
