Easy Pickled Garlic Scapes

Ingredients

  • 1 1/2 to 2 pounds of garlic scapes 6 to 7 bunches
  • 6 tablespoons of pickling spice
  • 6 teaspoons of canning salt
  • 1.5 teaspoons red pepper flakes optional
  • 6 cups of water
  • 6 cups of vinegar

Instructions

  • Wash the garlic scapes in cool water and drain. Trim off any yellow or damaged spots.
  • Cut the scapes into 1 to 3 inch pieces and pack into your jars.
  • In each pint jar add 1 tablespoon of pickling spice, 1 teaspoon of canning salt, and 1/4 teaspoon of red pepper flakes (optional).
  • Bring the water and vinegar mixture to a boil and then ladle over the garlic scapes leaving 1/2 inch of headspace.
  • Remove any air bubbles and wipe the rims of the jars clean. Add the lids and rings and tighten finger tight.
  • Process pints in a water bath canner for 10 minutes increase the time to 15 minutes above 6,000 feet. Quarts process for 15 minutes, 20 minutes over 6,000 feet.

Notes

For extra pretty pickles leave some of the garlic scapes whole and curl them around inside the jars.
