Leftover Turkey Pasta Bake

Ingredients

  • 4 1/2 cups dried pasta 400 g
  • 2 TBS. vegetable oil
  • 1 large onion peeled and chopped
  • 3 cloves garlic minced
  • 2 green bell peppers chopped
  • 3 cups leftover turkey cubed or shredded
  • 4 cups canned diced tomatoes drained
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1 tsp. dried oregano
  • 1 tsp. dried basil
  • 1 can tomato sauce 3.5 cups
  • 3 cups mozzarella cheese shredded

Instructions

  • Preheat oven to 350 F
  • Bring a large pot of water to a boil and cook the pasta until al dente, drain.
  • While the pasta is cooking, heat oil in a large skillet over medium heat.
  • Add the onion and cook until softened, 3-4 minutes.
  • Add the garlic, peppers, salt, and pepper and cook for 2 minutes.
  • Add in the cooked turkey, diced tomatoes, and tomato sauce bring the mixture back to a boil then add the pasta and stir together.
  • Top with shredded cheese.
  • Bake for 20-25 minutes until the cheese has melted and turned golden brown.
  • Remove from the oven and top with parsley before serving if desired.

Notes

Bake in a 12 inch skillet or 9x13 casserole dish.
