Maple Mashed Sweet Potatoes

Ingredients

  • 3 pounds sweet potatoes about 6 medium, peeled and cubed
  • 1/4 cup salted butter softened
  • 1/4 cup milk
  • 1/4 cup maple syrup or to taste

Instructions

  • Peel and quarter the sweet potatoes, then place them in a large pot and cover with cold water.
  • Bring to a boil over high heat, then reduce to medium-high and boil gently for 10 to 15 minutes or until the sweet potatoes are tender.
  • Drain the sweet potatoes and return them to the pot, and mash.
  • Add the butter, milk, and maple syrup and stir until smooth.
