Red Clover Jelly

This red clover jelly recipe is the perfect sweet floral treat. Easily made from wild red clover flowers right in your yard. This fun flower jelly is perfect for enjoying on toast or biscuits, or giving as a unique gift.

Ingredients

  • 2 cups of red clover blossoms
  • 4 cups water
  • 4 cups sugar
  • 2 tablespoons lemon juice
  • 1 box powdered pectin

Instructions

  • Pick 2 cups of red clover flowers and rinse them under cold water to remove any dirt or bugs. Then place them into a quart-size mason jar.
  • Pour 4 cups of boiling water over the blossoms. Let the mixture cool, and then place it in the fridge for 24 hours.
  • The next day, strain the flowers and squeeze out as much of the clover tea as you can. You should have about 4 cups of liquid.
  • Pour the liquid into a large pot, add the lemon juice and pectin. Bring the mixture to a rolling boil over medium-high heat while stirring to help the pectin dissolve.
  • Add the sugar and return to a boil while stirring. Bring the mixture back to a rolling boil while stirring for 1 minute.
  • Remove the jelly from the heat and ladle into prepared jelly jars, leaving 1/4 inch headspace. Wipe the rims clean and place the lids on finger tight.
  • If you are canning it, process the jars in a water bath canner for 10 minutes (15 minutes over 6,000 feet in elevation).

Notes

Make sure the flowers you are using are real red clover flowers and are edible, not all flowers are edible. Only harvest from safe, clean areas that haven't been sprayed with herbicides or pesticides or where animals have been kept.
The jelly can be stored in the refrigerator for up to a month or in the freezer for up to 6 months.
If you choose to freeze the jelly, make sure to use freezer-safe containers and leave 1 inch of headspace to account for expansion.
If you are using bulk pectin, one normal box of pectin is equivalent to 6 tablespoons of pectin.
