Apple Cranberry Bread

This apple cranberry bread is one of those easy, quick breads that works just as well for breakfast as it does for an afternoon snack. It’s lightly sweet, packed with apples and cranberries. With just enough cinnamon to give it that cozy fall and winter feel.
I’ve always loved the combination of apples and cranberries, especially during the holidays. And this easy bread recipe brings those flavors together in a simple, no-fuss way. It’s perfect for holiday baking and works just as well as an easy dessert recipe to enjoy with coffee or tea.
Ingredients
- 2 cups diced apples (peeling optional)
- 3/4 cup white sugar
- 2 tablespoons vegetable oil
- 1/4 cup of orange juice
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 1/2 cups flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1 cup cranberries, fresh or frozen
How To Make Apple Cranberry Bread
Preheat your oven to 350°F. Grease a 9×5-inch loaf pan and then set it aside.
In a large mixing bowl, add the sugar, oil, egg, orange juice, and vanilla and mix well.
In a separate mixing bowl, add the flour, baking powder, baking soda, salt, and cinnamon and mix well.
Next, stir the dry ingredients into the wet until the dry ingredients are moist.
Then fold in the cranberries and apples until they are well mixed throughout the batter. The batter will be very thick.
Spoon the batter into your prepared bread pan and spread it evenly.
Bake for 55 to 60 minutes, until the center tests done with a toothpick.
Remove the bread from the oven and let it cool in the pan for 15 minutes before turning out onto a cooling rack.
