Soft and Chewy Oatmeal Cookies

Enjoy soft, chewy oatmeal cookies with this no fail homemade recipe. Quick, easy, and loaded with flavor from the oats, brown sugar, and cinnamon. They are perfect as is but also make a great base cookie for adding your favorite add-ins like nuts and raisins.
These homemade oatmeal cookies are an old family favorite recipe. They’ve been one of my favorite cookies since I was a little kid. They are such an easy dessert to make and always a hit on cookie trays for gift giving or parties.
I know old fashioned oatmeal cookies don’t look as exciting on a plate as chocolate chip cookies, snickerdoodles, or even peanut butter cookies. But you just can’t beat the taste of these classic cookies.
This simple recipe makes a nice soft cookie with a chewy texture. They are great as is, but you can add anything you like to the batter, such as raisins, nuts, or chocolate chips.
Ingredient Notes
Butter: Make sure you use room temperature butter so that it creams with the sugar easily.
Sugar: This recipe uses all white sugar, but you can substitute brown sugar.
Quick Oats: I love using quick cooking oats in these cookies. They help make nice, chewy oatmeal cookies without being overbearing. You can substitute old fashioned oats or pulse them in a food processor or blender to turn them into quick cooking oats.
Flour: All-purpose flour is used in these cookies. Regular or unbleached work great.
Eggs: Eggs help bind the dough together. You’ll need two large eggs for these cookies.
Baking Soda: Baking soda helps the cookies to rise.
Vanilla extract, Ground Cinnamon, And Salt: These help to give flavor to the cookies, and cinnamon and oats are just a classic combination.
How To Make Chewy Oatmeal Cookies
Combine the flour, salt, baking soda, cinnamon, and oatmeal in a medium-sized mixing bowl. Stir until the dry ingredients are well mixed, then set aside.
Add the softened butter and sugar into the bowl of your stand mixer using the cookie paddle attachment. You can also use a large mixing bowl and hand mixer.
Cream the butter and sugar until smooth, 1 to 2 minutes, depending on your mixer.
Then add the eggs and vanilla and mix well until the batter is nice and smooth.
Slowly mix in the dry ingredients.
Scoop 1 to 2 tablespoon sized dough balls and place them onto your prepared baking sheet lined with parchment paper.
Bake for 8-10 minutes until the bottom is slightly golden brown. Let the cookies cool on the cookie sheet for 5 minutes, then move to a rack to cool completely.

Ingredients
- 1 cup butter softened
- 1 cup white sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 1/2 cups all-purpose flour
- 1 cup quick oats
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat the oven to 375F. Line your baking sheets with parchment paper or silicone baking mats and set aside.
- Add the flour, sugar, salt, baking soda, cinnamon, and oats in a medium-sized mixing bowl. Mix well and set aside.
- In your stand mixer bowl, add the butter, sugar, and cream together.
- Then, add the eggs and vanilla and mix well until it is smooth.
- Slowly add in the dry ingredients and mix until combined.
- Form 1 to 2-tablespoon cookie dough balls using a cookie scoop and drop them onto your prepared cookie sheet.
- Bake for 8-10 minutes or until lightly browned on the edges.
Notes
- Baked cookies freeze well for up to 3 to 4 months. Place the cooled cookies onto parchment-lined trays and cover. Place into your freezer for 1-2 hours until frozen.
- Layer the frozen cookies in an airtight container, separating the layers with parchment or wax paper. Label and date the container, then place it back into the freezer.
