- 1 pound ground beef
- 1 medium red onion diced
- 1 green bell pepper diced
- 4 cloves garlic chopped
- 1 cup tomato sauce
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups shredded cheddar cheese
- 8 flour tortillas 7 or 8 inch
Place the ground beef in a large skillet and cook until no longer pink, then drain the extra grease.
Add the diced bell pepper and onions and continue cooking until the meat is done and vegetables are tender.
Add the garlic and seasonings and cook for another minute.
Next, stir in the tomato sauce and cook for another minute.
Lay the tortillas out and sprinkle half of the cheese on one side of each tortilla. Then spread the meat mixture evenly over top of the cheese. Add the remaining cheese on top of the meat and fold the tortilla over.
Melt 2 tablespoons of butter in a large skillet over medium heat.
Place the tortilla into the skillet and cook slowly until the bottom has browned, about 2 minutes. Carefully flip the quesadilla over and cook until the cheese has melted and other side has browned.
Repeat the steps for each quesadilla.
