- 1 pound ground beef
- 1 medium red onion, diced
- 1 green bell pepper, diced
- 4 cloves garlic, chopped
- 1 cup tomato sauce
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups shredded cheddar cheese
- 8 flour tortillas (7 or 8 inches)
How To Make Beef Quesadillas
Start by adding the ground beef to a large skillet over medium heat. Cook it until it’s no longer pink, breaking it up as it cooks. Once it’s done, carefully drain off any extra grease.
Add the diced onion and green bell pepper to the skillet and continue cooking until the vegetables soften and everything is cooked through.
Stir in the garlic, oregano, salt, and pepper, and let it cook for about a minute, just until the garlic smells fragrant.
Next, stir in the tomato sauce and cook for another minute to warm everything through. Turn off the heat and set the filling aside while you prep the tortillas.
Lay the tortillas out on a clean surface. Sprinkle a layer of cheese over one half of each tortilla.
Then spoon the beef mixture evenly over the cheese. Top with the remaining cheese, then fold the tortillas over to close them.
Heat about 2 tablespoons of butter in a large skillet over medium heat. Once the skillet is hot, place a quesadilla in the pan and cook slowly until the bottom is golden brown. Carefully flip it over and cook until the other side is browned and the cheese has melted.
Repeat with the remaining quesadillas, adding more butter to the pan if needed. Let them sit and cool for 1 to 2 minutes before slicing in half or into quarters. Serve warm with your favorite toppings like sour cream, salsa, or guacamole.
