BLT Pasta Salad

This BLT pasta salad is a simple, creamy dish made with tender pasta, crispy bacon, fresh lettuce, and juicy tomatoes. It’s easy to make and perfect for BBQs, potlucks, or serving a crowd.

Ingredients

  • 2 pounds rotini pasta cooked and cooled
  • 1 pound bacon cooked and chopped
  • 1 pint grape tomatoes cut in half
  • 1/4 to 1/2 head iceberg lettuce chopped (about 4 cups)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 3/4 cups Miracle Whip

Instructions

  • Bring a large pot of water to a boil over medium-high heat. Once the water is boiling, add your rotini pasta and cook according to package directions until it’s al dente.
  • While the pasta is cooking, place the bacon in a skillet over medium-high heat and cook until it’s evenly browned, about 8-10 minutes. Then drain the grease and chop up the bacon.
  • When the pasta is done, drain and rinse it in cold water to cool it down quickly. Then drain and pour into a large mixing bowl.
  • Add the Miracle Whip and the prepared vegetables, bacon, and seasonings. Stir until the pasta is well coated.

Notes

  • Servings 10-12 as a main dish, 20-24 as a side dish.
  • Easy to make ahead of time for your lunch or dinner meal prep.
