Peel the butternut squash, cut it in half, and remove the seeds.
Cut the squash into slices about 1/3 of an inch wide by cutting across the width of the squash. Then lay the slices flat and cut into fry shapes.
Mix in a bowl with olive oil, garlic powder, salt, black pepper, and ground sage until well covered.
Spread them evenly over a baking sheet.
Bake in a preheated oven until they are browned and crisp on the edges, about 40 minutes. Flipping the fries halfway through. To make them extra crispy put them under the broiler for a minute or two but watch closely so they don't burn.
