Easy Stuffing Muffins

Crispy, golden stuffing muffins made with boxed or leftover stuffing. Easy to make, cute on the table, and perfect for holiday meals or any night you want a cozy side dish.

Ingredients

  • 4 cups of leftover stuffing or 6 oz box stuffing, prepared
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley finely chopped
  • 1/2 teaspoon salt
  • 2 tablespoons gravy
  • 1 tablespoon butter melted
  • Gravy for serving

Instructions

  • Preheat the oven to 375°F. Grease your muffin pan and set it aside.
  • Toss the stuffing with the Parmesan cheese, parsley, and salt in a large bowl.
  • Microwave the butter and 2 tablespoons of gravy for about 20 seconds, until the butter is melted. Pour the mixture over the stuffing mixture and stir together.
  • Gather the mixture with an ice cream scoop and drop into 9 cavities of the muffin tin.
  • Bake them for 25 minutes, until golden.
  • Top with more gravy to serve, if desired.
