Easy Stuffing Muffins

These easy stuffing muffins are such a fun twist on a classic holiday side dish. They’re crispy on the outside, soft in the middle, and just the right size. You can make them with a simple box of stuffing mix, so they’re quick and easy when you need a no-stress side.
They also work perfectly for using up leftover stuffing. Just mix, scoop into a muffin tin, bake, and you’re done. They look cute on the table and are always a hit with picky eaters who like their food in small bites.
Ingredients
- 4 cups of leftover stuffing (or 6 oz box of stuffing, prepared)
- 1/4 cup Parmesan cheese
- 2 tablespoons fresh parsley, finely chopped
- 1/2 teaspoon salt
- 2 tablespoons gravy
- 1 tablespoon butter, melted
- Gravy for serving
How To Make Easy Stuffing Muffins
Preheat the oven to 375°F. Grease your muffin pan and set it aside.
Chop up the fresh parsley.
Add the stuffing with the Parmesan cheese, parsley, and salt to a large bowl.
Microwave the butter and 2 tablespoons of gravy for about 20 seconds, until the butter is melted. Pour the mixture over the stuffing mixture and stir together.
Gather the mixture with an ice cream scoop and drop into 9 cavities of the muffin tin.
Bake them for 25 minutes, until golden. Top with more gravy to serve, if desired.
Storage
Store leftovers in an airtight container in the fridge for 3 to 4 days. Reheat in the oven or air fryer to keep the edges crispy. You can also freeze them and reheat later for an easy side.
