Ingredients

  • 8 oz round of Brie
  • 2 large baking apples cored and chopped
  • ½ medium orange peeled and chopped, with juice
  • 2 tablespoons red onion chopped
  • 2 teaspoons fresh ginger finely minced
  • ¾ teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon dried rosemary
  • 3 tablespoons honey
  • ¼ teaspoon salt
  • ¼ cup apple cider
  • ¼ cup pecans roughly chopped
  • Fresh thyme or rosemary sprigs for garnish

Instructions

  • Cut the top off the Brie and place it inside a round, heat-proof bowl. Pick one that is just large enough to hold it, about 4 1/2 to 5 inches wide and 1 inch deep. Place the rind back on top of the Brie and cover it tightly with aluminum foil, and set it aside.
  • Add the chopped apples, orange, onion, ginger, cinnamon, cloves, rosemary, honey, salt, and apple cider to the Instant Pot, stirring to combine.
  • Then place your prepared Brie onto the Instant Pot trivet and carefully lower it into the pot. Make sure to keep the arms up to make it easy to remove later.
  • Place the lid on and lock it into place. Then turn the pressure valve to the sealing position. Set the manual setting to high for 5 minutes.
  • When the cook time is complete, do a natural pressure release for 10 minutes. Then do a quick release to vent the rest of the pressure.
  • Once the pin drops and no more steam comes out, carefully remove the lid. Carefully lift out the trivet and Brie with potholders and set aside.
  • Next, select the saute option on the high setting. Bring the fruit mixture to a low boil while stirring often. Heat until the mixture thickens, approximately 2 to 3 minutes. Then turn off your Instant Pot.
  • Take the foil and the top piece off the rind of the warm Brie. To serve, transfer it to a tray or wooden board and spoon some of the fruit mixture on top.
  • Sprinkle the top with the chopped pecans and garnish with small sprigs of fresh rosemary or thyme, if desired. Serve immediately with crackers, or crostini, and fresh apple slices.
