Strawberry Banana Baked Oatmeal

Ingredients

  • 6 cups rolled oats
  • 1 1/2 cups brown sugar
  • 4 teaspoons baking powder
  • 4 teaspoons ground cinnamon
  • 2 teaspoons salt
  • 4 eggs
  • 3 cups milk
  • 2/3 cup butter melted
  • 4 teaspoons vanilla
  • 2 cups strawberries sliced
  • 2 bananas sliced

Instructions

  • Preheat your oven to 350°F. Lightly grease your 9x13 baking pan and set aside.
  • In a large mixing bowl, add the oats, brown sugar, baking powder, cinnamon, and salt. Stir together until it's well combined.
  • Next, add the eggs, milk, melted butter, and vanilla. Stir until the wet and dry ingredients are well combined. Then, fold in the strawberries and bananas.
  • Pour the mixture into the baking dish. Bake at 350°F for 40-45 minutes until the center has set and the top has browned.

Notes

You can substitute melted butter for vegetable oil and the milk for water, almond milk, or your favorite alternative.
Store leftovers covered in your fridge for up to a week. To freeze wrap the pan with foil and freeze for up to 3 months. Freeze individual slices in freezer-,safe bags or containers.
Reheat a full pan in the oven at 350°F for 20 minutes or until heated through. Slices will take 5-10 minutes in the oven or 1 minute in the microwave.
