How To Make Easy Strawberry Banana Baked Oatmeal

Step 1. Prep

Preheat your oven to 350°F. Grease a 9×13 baking dish and set it aside. Slice 2 bananas for the filling and 2 cups of strawberries, and set aside.

Step 2. Mix Dry Ingredients

Add the rolled oats, brown sugar, baking powder, cinnamon, and salt in a large mixing bowl, and stir until well combined.

Then add the milk, eggs, melted butter, and vanilla and mix well.

Step 4. Add Fruit

Fold in the sliced strawberries and bananas so they are mixed well through the batter.

Then pour the mixture into a 9×13 baking dish.

Bake at 350°F for 40-50 minutes until the middle is set and the top has browned.

Storage

To store in the refrigerator, let the baked oatmeal fully cool, then cover it with plastic wrap and place it in your fridge. It will keep for up to a week.

For longer storage, you can freeze the whole pan or slices. Let the dish fully cool, then cover with foil and place it into the freezer. It will keep for up to 3 months.

You can also cut the oatmeal into squares and freeze it in freezer-safe containers or bags.

To reheat a pan of oatmeal, cover it with foil and warm it in your oven for 20 minutes or until heated through at 350°F.

To reheat individual servings, warm them for 5-10 minutes at 350°F or microwave them for 1 minute.

Ingredients

  • 6 cups rolled oats
  • 1 1/2 cups brown sugar
  • 4 teaspoons baking powder
  • 4 teaspoons ground cinnamon
  • 2 teaspoons salt
  • 4 eggs
  • 3 cups milk
  • 2/3 cup butter melted
  • 4 teaspoons vanilla
  • 2 cups strawberries sliced
  • 2 bananas sliced

Instructions

  • Preheat your oven to 350°F. Lightly grease your 9×13 baking pan and set aside.
  • In a large mixing bowl, add the oats, brown sugar, baking powder, cinnamon, and salt. Stir together until it’s well combined.

Notes

You can substitute melted butter for vegetable oil and the milk for water, almond milk, or your favorite alternative.
Store leftovers covered in your fridge for up to a week. To freeze wrap the pan with foil and freeze for up to 3 months. Freeze individual slices in freezer-,safe bags or containers.
Reheat a full pan in the oven at 350°F for 20 minutes or until heated through. Slices will take 5-10 minutes in the oven or 1 minute in the microwave.
