- 3 tablespoons vegetable oil
- 1 large yellow onion diced
- 4 large carrots diced (5 cups)
- 6 cloves garlic minced
- 3 large sweet potatoes peeled and diced (6 cups)
- 10 cups vegetable broth
- 1/4 teaspoon ground ginger
- 1 teaspoon pepper
- 2 teaspoons salt or to taste
- 1/4 teaspoon paprika
- 1 cup milk or cream optional
Heat the oil in a large pot, add the diced onions and cook, stirring often, until they are soft and translucent, about 10 minutes.
Add the garlic, and cook for another 30 seconds.
Add the sweet potatoes, carrots, broth, ginger, salt, and pepper. Stir, then cover and bring to a boil, and cook for 30-35 minutes until the vegetables are soft and easily pierced with a fork.
Remove from the heat and blend with an immersion blender.
Stir in milk and serve.
