  • 1 large yellow onion, diced
  • 4 large carrots, diced (5 cups)
  • 6 cloves garlic, minced

How To Make Sweet Potato Carrot Soup

Add the sweet potatoes, carrots, broth, ginger, salt, and pepper.

Broth, vegetables, and seasonings are stirred together.
Vegetables are cooked until tender and ready to puree.

Then give everything a good stir to mix the seasonings through the soup.
Cover and bring to a boil, and cook for 30-35 minutes until the vegetables are soft and easily pierced with a fork.
