Ingredients

  • 1 tablespoon olive oil
  • 1 onion diced
  • 3 cloves garlic chopped
  • 12 cups turkey broth
  • 2 cups leftover turkey meat
  • 2 large carrots sliced
  • 4 stalks celery thinly sliced
  • 1 cup parboiled rice
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried ground sage
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Heat the olive oil in a large pot, add the onions, and cook until they are soft and translucent, about 5 minutes. Add the garlic and cook for another 30 seconds.
  • Add the remaining vegetables, turkey, seasonings, and stock. Stir to combine and bring the mixture to a boil.
  • Reduce the heat to medium and add the rice, stirring to combine. Cover and simmer for 25 to 30 minutes, or until the rice has cooked through and is tender.
