After a big holiday dinner, it’s nice to have some easier light meals. Soups are one of my go-to easy dinner ideas, they are perfect for dinner or lunch.

This turkey rice soup is one of our family favorites. Loaded with turkey, vegetables, and tender rice, this soup is filling without being heavy. It’s easy to make and perfect for lunch or busy weeknight dinners.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, chopped
  • 12 cups turkey broth
  • 2 cups of leftover turkey meat
  • 2 large carrots, sliced
  • 4 stalks of celery, thinly sliced
  • 1 cup parboiled rice
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried ground sage
  • 1 teaspoon of salt
  • 1/4 teaspoon of pepper

How To Make Turkey And Rice Soup

Diced onions were added to the hot oil in the pot.
The onions and garlic are cooked in the pot.

Heat the olive oil in a large pot, add the onions, and cook until they are soft and translucent, about 5 minutes. Add the garlic and cook for another 30 seconds.

Cooked turkey, carrots, and celery were added to the pot.
Vegetable broth and seasonings were added to the pot.

Add the remaining vegetables, turkey, seasonings, and stock.

Soup ingredients are stirred together.

Stir to combine and bring the mixture to a boil.

Reduce the heat to medium and add the rice, stirring to combine. Cover and simmer for 25 to 30 minutes, or until the rice has cooked through and is tender.

Substitutions

  • Turkey broth – If you don’t have turkey broth, swap it for chicken broth.
  • Fresh herbs vs. dried – If you prefer to use fresh parsley or thyme, just use 3 times the amount listed.
  • Change the rice – Parboiled rice is my favorite to use, but you can use white rice or brown rice. Just remember that brown rice will need extra cooking time and broth.
  • Veggies – You can swap the veggies to use what you have on hand, peas, corn, and green beans are all great options.
