Need a quick and easy side dish idea? You’ll love cheesy garlic toast with tomatoes! It takes just a few minutes to make, and we love to serve it with any pasta or meat dish.

In small batches, it’s perfect for a quick snack and can easily be made in a toaster oven. But I use the oven to make a large batch for a family dinner side dish. It goes great with chili, soups, noodles, pasta dishes, or any meat and veggie meal.

Ingredient Notes

Bread – You can use any type of sliced bread you have on hand. Good old sandwich bread works great, but if you have extra French bread, Italian bread, or sourdough bread that needs to be used up, it’s a wonderful option, too.

Cheese – Cheddar cheese, mozzarella cheese, and marble cheese are all great options to use.

Garlic – I like to use fresh garlic finely chopped, but if you don’t have any on hand, garlic powder works well.

Spices – Classic Italian herbs like basil and oregano are perfect for this easy recipe.

How To Make Cheesy Garlic Toast With Tomatoes

Add the butter, chopped garlic, salt, pepper, basil, and oregano in a small saucepan. Turn it on to medium-low heat to melt the butter.

While you wait for the garlic butter to melt, place your bread slices on a baking tray.

When the butter has melted, stir the mixture well and spoon it evenly over the bread.

Then, place one or two slices of tomatoes on top.

Shredded cheese sprinkled over the tomato slices and bread.

Sprinkle shredded cheese over top of the tomatoes, and if desired, you can also sprinkle some fresh or dried herbs on top of the cheese. Some extra basil, oregano, or parsley are great options.
