Easy Blueberry Cobbler

This easy blueberry cobbler recipe is a classic old-fashioned dessert made with a sweet blueberry filling and a soft, cake-like batter topping. It’s based on my grandmother’s cobbler recipe, and it’s one of those simple, comforting desserts that never goes out of style.
This blueberry cobbler recipe is adapted from my grandmother’s apple cobbler recipe. The same yummy cake topping, but the filling adjusted for blueberries instead. I love how a dessert this simple can taste so much like a special treat.

Ingredients
Filling
- 6 cups blueberries (3 pints)
- ½ cup white sugar
- 2 teaspoons lemon juice
- 2 tablespoons flour
Topping
- 2 cups all-purpose flour
- 1 cup white sugar
- ⅔ cup butter
- 1 egg
- 1 teaspoon vanilla
- 1 cup milk
- ½ teaspoon salt
- 1 teaspoon cinnamon
- 3 teaspoons baking powder
How To Make An Easy Blueberry Cobbler
Prep The Pan
Preheat your oven to 375°F. Lightly grease a 9×13 baking dish and set it aside.
Make The Filling
In a bowl, mix the blueberries, lemon juice, flour, and ½ cup of sugar, stir together until the berries are well coated. Set aside.
Combine The Dry Ingredients
In a medium mixing bowl, combine the flour, baking powder, salt, and cinnamon. Set aside.
Cream The Butter
In a separate mixing bowl, add the butter, sugar, egg, and vanilla. Beat with a mixer until fluffy.
Combine The Batter
Add half of the dry mixture to the butter mixture and mix well, then add half of the milk and mix well. Add the remaining flour mixture and milk, and stir until well combined.
Assemble
Pour the blueberries into your prepared baking dish, then pour the batter evenly over the top.
Bake
Bake for 45 to 50 minutes, or until the top is golden brown and the filling is bubbly and the cake topping tests done with a toothpick.
Substitutions
- Fresh blueberries: Frozen blueberries can be used. Just don’t thaw them first, add them straight to the filling mixture.
- Lemon juice: Bottled lemon juice works fine if you don’t have a fresh lemon on hand.
Variations
- Mixed berry cobbler: Swap out a cup or two of blueberries for blackberries or raspberries.
- Extra cinnamon: Add a bit more cinnamon to the topping for a warmer, spiced flavor.
