Easy Blueberry Peach Crisp

One of the things I love about summer is all the yummy fresh fruit that is in season. I try to grow a variety of fruits in our garden but I also love picking up seasonal produce at local farmers markets and grocery stores.

The downside to summer is that it’s such a busy time! That’s why I love easy summer desserts. Peach crisp and blueberry crisp are two of my favorite easy dessert recipes.

So I decided to combine them, and this simple blueberry peach crisp has become my go-to quick summer dessert. Not only does it mix peaches and blueberries, two of my favorite fruits, it’s so easy to make!

Ingredient Notes

Canned Peaches – I use canned peaches because I always have home canned peaches on hand, but you can substitute fresh peaches or frozen ones if you like. You might need to adjust the baking time.

Blueberries – I like to use fresh blueberries, but frozen or canned blueberries work great too.

White sugar – While the fruit is naturally sweet, it’s also acidic, and adding a little sugar to the filling is a great way to enhance its flavor.

All-purpose flour – The flour helps to thicken the fruit juices released by the peaches and blueberries as they cook. If you have really juices, peaches, and blueberries, you can increase the amount of flour.

Lemon juice – Helps to bring out the flavor of the blueberries, you can use fresh squeezed lemon juice or concentrate. 

Large flake oats – Large flaked oats or old-fashioned oats have always been my favorite for making crisp toppings. Their larger size helps to keep the topping from getting mushy.

Brown sugar – Brown sugar adds a wonderful, rich taste to the topping.

Butter – Butter is very important for making a great crisp topping. As it melts and is mixed with the flour and oatmeal, it creates a nice, rich, and crispy topping.

Cinnamon – Adds a wonderful warmth to the recipe.

Equipment

  • 12-inch cast iron skillet or a 9×13 baking pan
  • Mixing bowl and mixing spoons
  • Measuring cups and spoons

How To Make Blueberry Peach Crisp

Make The Filling

Drain your peaches and add them to a 9×13 pan or 12-inch cast iron skillet. Make sure to save the juice, it’s great for adding to drinks for flavoring. Add your blueberries and lemon juice to the peaches and stir together.

Next, sprinkle the white sugar, cinnamon, and flour over top of the fruit mixture and stir until the fruit is well coated, then set it aside.

Make The Topping

In a large bowl, combine the oats, brown sugar, and flour and mix together until well combined.

Next, melt the butter and pour it into the flour mixture. Stir well until the dry ingredients are combined with the butter.

Spoon the topping evenly over your fruit mixture.

Bake at 350F for 35 to 40 minutes or until the fruit is bubbling and the topping is a nice golden brown.

​What To Serve With Blueberry Peach Crisp

A warm fruit crisp is wonderful on its own, but a big scoop of vanilla ice cream is the perfect addition! If you don’t have that on hand, some whipped cream or caramel drizzle is also delicious.

Easy Blueberry Peach Crisp

Ingredients

Filling

  • 4 cups canned peaches drained
  • 2 cups blueberries
  • 1/4 cup white sugar
  • 1/4 cup all purpose flour
  • 1 tsp cinnamon
  • 4 tsp lemon juice

Topping

  • 1 cup old fashioned oats
  • 1 cup brown sugar
  • 1 cup all purpose flour
  • 1 cup butter

Instructions

  • Preheat oven to 350F.
  • Gently stir blueberries, peaches, and lemon juice together in your cast iron skillet or 9×13 pan. Sprinkle the white sugar and flour over top and stir into the fruit.
  • In a medium sized mixing bowl combine the oats, brown sugar, flour, and cinnamon, stir to mix well.
  • Pour in the melted butter and stir until the texture of course crumbs.
  • Sprinkle the topping evenly over the fruit filling.
  • Bake for 35 to 40 minutes or until the top is golden and the fruit is bubbling.
