This easy blueberry crisp recipe is the perfect easy dessert idea for summer! Learn how to make blueberry crisp with fresh or frozen blueberries.

Blueberries have always been one of my favorite summer fruits, and since summer can be a busy time of year, I love using an easy dessert recipe like this simple blueberry crisp.

Just like apple crispblueberry peach crisp, or rhubarb crisp, I love to serve this warm from the oven, but it tastes great cold, too.

Ingredients

Blueberries – I love to use fresh blueberries in the summer, but frozen blueberries also work great.
Flour – I use all-purpose flour, some for the filling to help thicken the berry juices and the rest for the topping.
Large flake oatmeal – Using large flaked oatmeal makes the best oat topping. It’s more crunchy and crumbly in texture.
White granulated sugar – White sugar is used in the filling to help bring out the flavor of the blueberries.
Brown sugar – Light brown sugar for the topping.
Butter – I use salted butter, if you are using unsalted then you may want to add a little salt.
Ground cinnamon – Cimmanon helps to give the filling a little warmth.
Lemon juice – Lemon juice helps to balance out the sweetness of the fruit and sugar.

Equipment

  • 9×13 baking pan or a 12-inch cast iron skillet
  • Mixing bowls, mixing spoons
  • Measuring cups and spoons

How To Make Blueberry Crisp

Make The Filling

In a large mixing bowl, add your blueberries. Sprinkle the flour, white sugar, cinnamon, and lemon juice over top.

Mix gently to coat the blueberries, then transfer them to a 9×13 baking dish.

Make The Topping

In a separate bowl add your flour, oatmeal, and brown sugar and mix together. Then add in the melted butter and stir until the dry mixture is well combined with the butter.

Spoon the topping over your blueberry mixture.

Bake at 350F for 35 to 40 minutes or until the berries are bubbling and the topping is golden brown.

What To Serve With Blueberry Crisp

Of course, you can enjoy this easy dessert on its own but vanilla ice cream or whipped cream are the perfect topping to go along with it.

Can I Use Frozen Blueberries?

Yes, frozen blueberries work great for making crisps. If using frozen berries increase your cooking time by 15 minutes.

Can Blueberry Crisp Be Left Out?

After baking, you can leave your blueberry crisp out on the counter covered for 1 to 2 days. For longer storage, keep it covered in the refrigerator for up to 4 or 5 days.

Why Is My Crisp Watery?

If your berries were very juicy, you could end up with a watery filling. When you are preparing the filling if you notice the berries are very juicy add another teaspoon of cornstarch to the filling to help thicken the juices.

Can You Make Blueberry Crisp Ahead Of Time?

You can make crisps ahead of time, but if you are taking it to a get-together and want the perfect crispy topping, you will want to bake it fresh. You can make it easier on yourself by mixing the topping and filling ahead of time and keeping both in the fridge.
Then just pull it out and bake it when ready to serve.

Can You Freeze Blueberry Crisp?

Yes, blueberry crisp is easy to freeze, but it’s best done before baking. Simply prepare the crisp and then cover tightly with plastic wrap and place into the freezer. To bake from frozen just increase the baking time by 10 to 15 minutes.

Easy Blueberry Crisp

Easy blueberry crisp recipe is the perfect summer dessert! Made with fresh or frozen blueberries this blueberry crisp recipe with oats is a fun summer dessert for family dinner, BBQ’s, or potlucks.

Ingredients

Topping

  • 1 cup all purpose flour
  • 1 cup large flake oats
  • 1 cup brown sugar
  • 1 cup salted butter melted

Filling

  • 6 cups blueberries
  • 2 TBS. all purpose flour
  • 2 TBS. granulated white sugar
  • 1 tsp. ground cinnamon
  • 2 tsp. lemon juice

Instructions

  • Preheat oven to 350F.
  • Place blueberries in a bowl and mix gently with flour, sugar, cinnamon, and lemon juice then pour into a 9×13 baking pan.
  • In a separate bowl mix together the topping until crumbly. Sprinkle over the blueberries.
  • Bake for 35 to 40 minutes.

Notes

Store cooked blueberry crisp covered on the counter for 1-2 days or in the fridge for 4-5 days.
If you have very juicy blueberries add an extra teaspoon of cornstarch to the filling. This will help keep it from being too runny.
To freeze prepare the crisp and wrap it well with plastic wrap then freeze. When ready to bake increase the baking time by 10-15 minutes.
