If you’re looking for a quick and easy vegetable side dish, you’ll love this roasted zucchini recipe. With just a few pantry staples, you can turn fresh zucchini into a flavorful dish that works great with any meal.
We all know what happens when you plant zucchini in your garden, right? Yup, it starts producing like crazy.
If your garden is overflowing with zucchini, this recipe is a simple way to use them up. It’s quick enough for a weeknight dinner but tasty enough to make for guests.

- Zucchini – Medium-sized zucchinis work best for this recipe. Look for ones that are firm with smooth skin and no soft spots. You can cut them into rounds or half-moon shapes. Yellow zucchini or yellow squash also work perfectly in this recipe.
- Vegetable Oil – It helps the seasonings to stick to the zucchini slices. But also to help the zucchini turn a nice golden color. You can also use olive oil.
- Salt – It enhances the flavor of the zucchini and other seasonings.
- Black Pepper – It adds a mild heat and warmth to the dish and really helps to season the mild-tasting vegetable.
- Garlic Powder – It brings a savory, garlicky flavor, but is easier to hide from any picky eaters. You can easily swap it for onion powder or Italian seasoning to change up the flavor.
How To Make Roasted Zucchini
Step 1 – Prepare the Zucchini
Preheat your oven to 400°F. Line a baking sheet with parchment paper and set aside.
Wash your zucchinis and cut them into round slices. If they are very wide, you can cut them into half-moon shapes so they cook faster. Then place them into a medium-sized mixing bowl.
Step 2 – Season
Add the vegetable oil, salt, black pepper, and garlic powder. Toss until the zucchini slices are well covered in oil and seasonings.
Step 3 – Roast
Spread them out in a single layer onto your prepared baking sheet.
Bake for 15 minutes, or until the zucchini is tender and turning golden to your liking.
Serve With:
- With Grilled or Roasted Meats – Perfect side to chicken, pork chops, steak, or salmon.
- As a Pasta Add-In – Toss it into baked pasta or fettuccine alfredo.
- Make A Rice Bowl – Serve them over rice with a drizzle of sauce or dressing.
