This creamy bacon cucumber salad combines crisp cucumbers, smoky bacon, red onion, and a creamy dill dressing. It’s an easy side dish packed with flavor.
I love making this simple salad recipe when the weather starts to get hot, it’s a fun twist on my classic creamy cucumber salad.
It’s a great choice for quick summer meals, BBQs, and family gatherings. The cucumbers stay cool and refreshing, while the bacon adds a savory twist, turning a simple cucumber salad into a delicious, easy side dish or lunch on a hot summer day.
Ingredients
- 3 English cucumbers, sliced
- 1/2 small red onion, thinly sliced
- 1 teaspoon salt
- 1 pound bacon, cooked and diced
- 1 cup Miracle Whip (or mayo)
- 2 teaspoons white sugar
- 4 teaspoons white vinegar
- 1/2 teaspoon dried dill weed
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
How To Make Creamy Bacon Cucumber Salad
Start by slicing the cucumbers and thinly slicing the red onion. Place them in a large bowl, sprinkle with salt, and toss to coat.
Cover the bowl and let it sit for 15 to 30 minutes. This helps draw excess moisture out of the cucumbers.
While the cucumbers are resting, cook the bacon in a skillet over medium heat until crisp. Drain the grease and chop the bacon into bite-sized pieces.
Drain the cucumber mixture in a colander and let the excess liquid drip away. Transfer the cucumbers and onions to a large mixing bowl.
In a small bowl, whisk together the Miracle Whip, sugar, vinegar, dill, garlic powder, and black pepper until smooth.
Add the bacon to the cucumbers and onion mixture, then pour the dressing over the cucumber mixture and stir until everything is evenly coated.
Then cover and refrigerate for at least 1 hour before serving.
Substitutions
- Miracle Whip – You can replace it with mayo if you prefer it works just as well.
- Bacon – If you don’t have bacon on hand, you can use bacon bits.
