One of my favorite snacks are potato wedges. I love them so much more than French fries!

I have a weakness for picking up a box of these now and then from the grocery store delis. The problem is that they really are not very healthy for you when deep fried.

So I was determined to come up with our own oven baked potato wedges. These are so good and have quickly become a family favorite.

Now I have to tell you I’m one of those odd cooks who doesn’t measure things most of the time. I’m a dash of this and sprinkle of that kind of girl.

I really tried to keep track of the seasonings I used in this recipe, but have fun with it and adjust the seasonings to your family’s tastes! If you like them a little spicy add some red pepper flakes, I almost always make a separate batch for my hubby that likes spicy food.

Supplies Needed To Make Oven Baked Potato Wedges

Cut your potatoes in half, then cut each half into 3 slices to form a wedge shape. Place your sliced potatoes into a large bowl, add the olive oil, and toss.

Add the garlic powder, oregano, salt, pepper and paprika to the bowl and toss the potatoes well to coat in your spice mix.

Potatoes spread on a baking tray.

Spread your potato wedges out onto a baking tray in a single layer. If you double them up, they won’t get crispy!

Then bake at 375 F for 30 to 40 minutes or until they are golden brown on the outside and tender in the middle. If you’re having trouble browning them but they are fully cooked, put them under the broiler for a minute or two.
