- Flour: I use all-purpose flour for these cookies.
- Eggnog: You can use store-bought or homemade eggnog. It’s a great way to use up leftover eggnog.
- Egg Yolks: Using just the yolks instead of the whole eggs makes these cookies chewier.
- Butter: I use salted butter to add a rich, buttery flavor and moistness to these cookies. If you want to use unsalted butter, then I’d suggest adding 1/2 teaspoon of salt to the recipe.
- Sugar: Both white and brown sugar are used to sweeten the cookies and create a rich flavor.
- Spices: Nutmeg, cinnamon, and vanilla help to bring the warm holiday flavor to these cookies.
How To Make Easy Eggnog Cookies
Preheat your oven to 300°F, and line your baking sheets with parchment paper.
In a medium-sized mixing bowl, add the flour, baking powder, nutmeg, and cinnamon and stir together until well combined. Then, set the dry ingredients aside.
In a large bowl or in your stand mixer bowl, beat the butter, white sugar, and brown sugar together until it’s light and fluffy.
Add the eggnog, egg yolks, and vanilla and beat until smooth.
Slowly add in the dry ingredients, mixing until they’re just combined.
Drop the cookie dough by the spoonful onto a prepared baking sheet, spacing them 2 inches apart. Sprinkle some ground nutmeg over the top of the cookies and bake for 20 minutes or until the edges are golden.
Let the cookies cool on the baking sheet for 1 to 2 minutes before transferring them to a wire cooling rack.
Storage
Let the cookies cool completely, and then store them in an airtight container for 3-5 days.
How To Freeze Eggnog Cookies
To freeze these cookies, let them cool completely. Then, place them on a parchment-lined baking sheet and cover. Then, place them in your freezer for a few hours or overnight until the cookies are frozen.
Remove from the freezer and package in an airtight container or freezer bags. Store in the freezer for up to one month.
When you’re ready to use the cookies, remove the package and thaw them in your fridge.
